Eggnog Tiramisu

The winter started here….. Even though we haven’t had a snowfall yet, it is pretty cold. We have drizzling rain often. Holiday recipes for this Christmas get a kick start from this eggnog tiramisu. For homemade eggnog recipe, click here

Tiramisu is an Italian dessert which means pick me up. For eggnog tiramisu, ladyfinger biscuits are soaked in eggnog. Some other desserts in this space are eggless almond yogurt mousse, cheese cake budino and plum crumble. I got the recipe from here

Preparation time: 30 minutes Chill time: 4 to 8 hours
Makes 9 servings
Ingredients:
1 cup of eggnog (If you can’t buy it, try homemade eggnog here)
16 oz of mascarpone cheese
¼ cup of rum
1 cup of whipping cream
2 tablespoons of granulated white sugar
24 Ladyfinger biscuits (For homemade lady fingers recipe, click here)
¼ teaspoon of ground nutmeg

Method:
Stir mascarpone cheese with a wooden spoon in a large bowl. Stir in 1/3 cup of eggnog and 2 table spoons of rum. In a chilled bowl, beat whipping cream with sugar on high speed till soft peaks are formed. 

Fold whipping cream into mascarpone cheese mixture with a rubber spatula carefully without deflating the whipping cream.

Arrange half of ladyfingers in the bottom of a 9 x 9 x 2 inch baking pan. (I made in a 6 x 3 inch round pan and the rest in a 6 cup rectangular glass dish (pyrex)). See Notes* 
Mix 2/3 cup of eggnog and 2 tablespoons of rum in a glass or large measuring cup.

Pour half of the eggnog mixture over lady fingers. Ensure that the ladyfingers are properly soaked. (or you may soak lady finger into the eggnog mixture and then arrange it)

Evenly spread half of mascarpone mixture over the lady fingers. Sprinkle half of nutmeg. Repeat for layers.

Cover and chill it overnight or at least 4 hours before serving.

*Notes:
# It doesn’t matter if you serve it inverted or as such in the prepared dish. If you wish to serve inverted, then before assembling, place 4 layers of plastic wrap so that it can be easily inverted. 

# Well soaked ladyfinger in eggnog makes it smooth and gives you a melt in mouth feeling.You can make it nonalcoholic by adding 1 teaspoon of vanilla extract instead of 2 tablespoons of rum.

We like Italian desserts. Thank God that it came out well with a little amount of work. Its so nice to embrace different cuisine culture. This is one of the best “make ahead desserts”. My better half had a double bliss in his eyes and words….. Try this and enjoy…!!!!
