Homemade Lady Fingers

This homemade lady finger biscuits can not only be used for Tiramisu but also as a tasty snack . My kid,  Rydhi loves this biscuits very much. Store in an airtight container. If you need to store it for more than 3 to 4 days, freeze it.




Ingredients

All Purpose Flour(Maida)                                            - 1/2 Cup
Vanilla Extract                                                          - 1/2 teaspoon
3 Large eggs (Separated the yolks and whites)         
Powdered white sugar (for Yolks)                             - 2 tablespoons
Powdered white sugar (for whites)                            - 3 tablespoons
Icing sugar for dusting on the tops of the cookies.

Procedure
Preheat you oven to 350 oF/ 177oC and line a baking sheet with parchment / butter paper.

With your electric mixer, beat the egg yolks and 2 tablespoons of sugar on high speed until the mixture comes thick and pale. When you raise the batter, it should fall back into the bowl in a slow ribbon.

Beat in vanilla extract and sift the cake flour into the batter but not mix or fold it.

Now whip the egg whites in a separate bowl until foamy.

Gradually add 3 tablespoons of sugar and beat till the egg whites are glossy.

Fold the egg whites into the egg yolk and flour mixture in three steps, mixing well after each addition.

Transfer the batter to a pastry bag and pipe the lady fingers. Sift the icing sugar onto the top of the lady fingers and bake for 8 to 10 minutes until they are firm, still spongy .

After baking, take the lady fingers out of the oven and keep it for a few minutes. Then slide the parchment/ butter paper and remove the lady fingers with a flat spatula.

You will get crispy lady fingers  :-)
