Easy Tiramisu with Custard Powder




This is actually a dream come true. I came to know about this beautiful Italian dessert from  the Master Chef USA ( a renowned TV program in star world). It impressed me at the first sight itself. So my first search was to make the lady finger or Savoiardi biscuits. Instead of the  lady finger biscuits,  any sponge cake can also be used. But I wanted to make my Tiramisu with the lady finger biscuits itself. Here, we won't get the lady finger biscuits as such. So baked and got my fresh lady fingers and done the Tiramisu.

First of all, I made the Tiramisu with the egg yolks to make the custard and the fresh lady fingers. Next time, I thought that why can't I make the custard with the custard powder which would definitely bring down my work. So I made my custard with  the custard powder in the usual procedure. Then I have assembled  the custard, soaked ladyfingers to set in the refrigerator to obtain my Tiramisu. It is then topped with sifted cocoa powder. I got the basic recipe of Tiramisu and lady fingers  from Joy of Baking.

Ingredients

For Custard cream Filling

Custard Powder ( Vanilla Flavored)- 3 tablespoon
Sugar                                                  - 4 tablespoon (can be increased or decreased as required)
Milk                                                   - 500 ml
Rum                                                   - 1 tablespoon
Vanilla Extract                                 - 1 tablespoon
Butter (Cubed into small pieces)   -1/4 Cup
All purpose flour (Maida)               - 1/4 Cup
Mascarpone cheese                         - 1 Cup

Soaking Syrup

Very strong Brewed Coffee or espresso      - 1and 1/2 Cups
Granulated white sugar                              - 1/3 Cup
Rum or Marsala                                         -  1 tablespoon

Lady Fingers

25 to 30 crispy lady fingers. If the lady fingers are not available, you can make homemade ladyfingers. For recipe, click here.

Topping

Cocoa powder                         - 30 grams

Procedure

Custard cream Filling

Stir the custard powder  and all purpose  flour in 1/4 cup milk (at room temperature) well to avoid any lumps.

Boil the milk and sugar in a saucepan on medium heat, stirring occasionally and when sugar is completely dissolved  and the milk starts to boil, pour the custard batter into the milk, whisking continuously with a wire whisk  (It is better to pour a little and then whisk and repeat. This is to avoid any lumps). When it boils, continue to stir it for 2 - 3 minutes until the custard thickens.

Remove from heat and pour it to another vessel and strain it if there are some lumps.

Whisk in the rum, vanilla essence and butter. Immediately cover the top surface of the custard with a cling film to avoid the crust formation and refrigerate until it thickens for at least 2 hours.

After the custard is completely cooled and thick enough, take a separate bowl, with a wooden spoon, beat the mascarpone cheese until soft and smooth.

Gently fold or whisk the cold custard to the mascarpone until smooth.

Coffee soaking syrup

In a bowl or vessel, combine the coffee, sugar and rum. Taste and add more sugar if required.

Assembling

Cover a 9x 5x3 inch loaf pan with a plastic wrap and ensure that the plastic wrap extends over the sides of the loaf pan.

Take the lady fingers one by one and dip in the coffee soaking syrup and place them side by side.

Completely cover the lady fingers with the 1/3 rd of the cream filling. Repeat the same for the next layers.

Now cover the Tiramisu with a plastic wrap and refrigerate until the custard is set ( preferably overnight). Before you cut the Tiramisu, If you need the Tiramisu more firm (easier to cut), freeze it for 2 hours.

When taken out from the refrigerator, remove the plastic wrap from the top and gently invert from the loaf pan onto the serving plate and remove the plastic wrap completely.

Sift cocoa powder or grated chocolate over the top. I put some chocolate sticks for decoration.

If you don't have  lady fingers, start the Tiramisu from the lady fingers. If you didn't get Mascarpone cheese, you can do it homemade using fresh cream like Amul.


In the next fine morning when Anish tasted it he told "Dear..... can you  make it frequently...? This is such an amazing dish..."  When my youngest brother, Rahul had it, he asked for more. Tiramisu literally means pick me up. No doubt, whenever you see Tiramisu you would definitely pick it up...... :P once you tasted. Thank Lord! my Tiramisu turned to be successful :-)
